TeaMates were made for summer. We love feeling the sun on our faces, exercising out doors and enjoying delicious summery treats. When you were a kid, hearing the ice cream van come round the corner was the most exciting thing in the world, but nowadays that tootling tune just reminds us that when you’re working on summer body goals, ice cream is not welcome.
That was until ‘nice-cream’ came along of course. Nice cream is basically vegan ice cream, made with frozen banana and natural ingredients. It’s naturally low in fat, refined sugar/dairy free and the best part is you can make any flavour you want!
Seeing as Mint Choc chip ice cream is one of our favourites, we’ve created a recipe for all you TeamMatcha babes to try out this summer. It’s totally yummy and 100% vegan and guilt free!
2 frozen bananas
4 tbsp coconut milk
2tsp Matcha & Mint
25g cacao nibs
First things first, peel your bananas and break them into bit sized pieces.
You’ll want to freeze these for a few hours before making the nice cream. (In our experience, leaving the banana over night makes it rock hard and has broken not one, but three EatCleanTea blenders! RIP Blenders).
Soften your frozen banana in the coconut milk for 5 minutes, then add them to the blender and whizz until you have a creamy texture.
Now add the 2 tsp of Matcha&Mint and cacao nibs and blend for 20 seconds.
Et Voila! Matcha & Mint Choc Chip Nice cream.
